The naturally cloudy appearance because it has not been filtered and because living yeast is added again before kegging, there is a second fermentation in the keg. This is why Declan has to store the kegs upside down, and flush the beer line every day. There is no filtration. It is naturally carbonated. The second fermentation protects the beer microbiologically (no pasteurization is needed after secondary fermentation).
It is damn fine stuff
The kegs are 20 liters in volume and once tapped, need to be sold within about 36-40 hours before the taste begins to deteriorate. As usual, Zig Zag is the cheapest place in Japan where you can buy Hoegaarden on tap. The two other pubs selling it in Okazaki (Noble Dor & New York Roots) sell the 250ml glass for 630 and 700 yen respectively, and neither have the 500ml glass.
